Level 3 Diploma in General Patisserie

The level 3 Diploma in General Patisserie is ideal for those who want to build upon the skills gained at level 2, making complex pastry and confectionery items and taking your learning to the highest level.

You will learn a range of high level skills and techniques used by international pastry chefs and patisseries as well as learning how to use a wide range of professional patisserie materials, equipment and ingredients.

It is ideal for those who work or want to work as pastry and patisserie chefs in the catering and hospitality sector.

When will I start the course and how long will it take?

The course will start in September and will take one year to complete.

The course takes place at St Helens College, Town Centre Campus, St Helens, WA10 1PP.

What will I study?

You will develop your specialist pastry and confectionery skills in our industry-standard kitchens and fine dining restaurant, Colours.

You will study the following:

  • The principles of food safety supervision for catering
  • Supervisory skills in the hospitality industry
  • Produce dough and batter products
  • Produce petit fours
  • Produce paste products
  • Produce hot, cold and frozen desserts
  • Produce biscuits, cake and sponges
  • Produce display pieces and decorative items
  • Exploring gastronomy

You will study alongside like-minded people in classes delivered by friendly supportive tutors.

How is it assessed?

Your work will be continuously assessed throughout the year by a combination of practical assessments and theory tests.

Do I need any previous qualifications to start this course?

You should have completed the level 2 Certificate in General Patisserie.

What are the course fees?
