A Taste of the Mediterranean

This course is suitable for students aged 19 and over.

Mediterranean cooking is both classic and contemporary. It is one of the most flavourful, fresh and varied cuisines - not to mention one of the healthier styles of eating.

This fascinating cookery course is intended to develop your culinary flair and allow you to create a compilation of fine Mediterranean recipes, that will transport you back to warmer climates and pleasant holiday memories.

You will cover a mix of Mediterranean cuisine, full of rich flavours from Spain, France, Morocco, Greece and neighbouring countries.

Whether you are an amateur cook or a food lover, on this enjoyable short course you will be taught alongside like-minded people by passionate chefs with significant experience.

When will I start the course and how long will it take?

This course is due to start on Tuesday 20th February 2024. You will attend college on Tuesday evening from 6.00pm - 9.00pm, for four weeks.

This course will take place at our Town Centre Campus, Water Street, St Helens, WA10 1PP.

What will I study?

The course will allow you to explore various ingredients and develop the basic craft skills of Mediterranean cookery, encouraging you to develop your own creative culinary ideas, whilst using quality ingredients.

Some dishes and recipes that you will cover may include:

  • Baked fish with fennel and aioli
  • Lamb tagine with couscous
  • Freshly baked Pitta bread, tzatziki, roasted tomato and feta salad

Course participants will also be able to develop their awareness of Health and Safety relating to the preparation of food, food safety awareness, practical knife skills and stove control.

How is it assessed?

There is no formal assessment. You will be given feedback based on your progress with suggestions and guidance for areas for improvement.

As with all of our leisure cookery courses, the main emphasis is to come along and enjoy!

Do I need any previous qualifications to start this course?

There are no formal entry requirements. The course is suitable for all levels of ability.

You will need to wear strong, flat sensible shoes and bring along an apron, tea towel, and an oven glove.

Please bring along a container to take what you have made home with you.

What are the course fees?

You may be eligible for Community Learning funding if you have not recently participated in a similar Community Learning programme, or received any other recent government funded training.

There are a number of fee options for this course including:

  • If you are unemployed - FREE
  • If you are employed - £40

The course price is inclusive of all of the ingredients that you will need for each session.

What can I go on to do once I have completed this course?

You may wish to progress onto an accredited qualification in this subject, which will allow you to practice your skills in the industry.
