Level 1 NVQ Certificate in Food Preparation and Cooking

Begin your culinary career here. Learn all of the basics that you'll need to secure your first job in the industry.

You'll be working in our kitchens from the start, learning the amazing knife skills that all chefs need, getting to know the kitchen equipment and cooking your first dishes.

You'll start by boiling, poaching and steaming, before moving on to baking, roasting, grilling and frying.

When will I start the course and how long will it take?

The course will start in September and will take one year to complete.

This course will take place at our Town Centre Campus, Water Street, St Helens, WA10 1PP.

What will I study?

During this course, you will cover the following units:

  • Introduction to the catering and hospitality industry
  • Food safety in catering
  • Health and safety awareness for catering and hospitality
  • Introduction to healthier foods and special diets
  • Introduction to kitchen equipment
  • Introduction to personal workplace skills
  • Preparing and cooking food by boiling, poaching and steaming
  • Preparing and cooking food by stewing and braising
  • Preparing and cooking food by baking, roasting and grilling
  • Preparing and cooking food by deep frying and shallow frying
  • Regeneration of pre-prepared food

How is it assessed?

You will be assessed by assignments, observations of preparing, cooking and serving food and short tests.

Do I need any previous qualifications to start this course?

You do not need any formal qualifications, just passion and a commitment to your studies.

Achieving a good standard of English and maths is a key requirement for many jobs, as well as for courses you may wish to progress on to. If you achieve below a grade 4 in your English and/or maths GCSEs at school, you will study it alongside your chosen course when you join us.

What are the course fees?

If you are a school leaver, aged 16-18, (under the age of 19 on or before 31st August 2024), you do not pay tuition fees or examination and registration fees and may be eligible for additional support depending on your financial situation. What can I go on to do once I have completed this course?

Once you have successfully completed this course, you'll be able to progress on to the level 2 Diploma in Professional Cookery.

Alternatively, you may decide to explore the hospitality industry. In which case, you could progress on to the level 2 Diploma in Food and Beverage Service.
