The food of Mexico has the distinction of being one of the world’s first fusion cuisines. It uses an alluring blend of flavours from the Spanish with those of this country’s fascinating indigenous people. Mexican food is known world-wide for its hot and spicy kick, yet its truly authentic dishes have much more to offer than just heat!

This inspiring course will develop your culinary flair and provide you with a range of Mexican recipes. The course allows participants to develop their culinary skills by experimenting with fresh local produce and explore quick and versatile methods to cook mouth-watering dishes.

This course is due to start on Thursday 19th March 2026. You will attend college on Thursday evening from 6.00pm – 9.00pm, for four weeks.

This course will take place at our Town Centre Campus, Water Street, St Helens, WA10 1PP.

The course will allow you to explore various ingredients, develop basic skills in Mexican cuisine and encourage you to develop your own creative culinary ideas. You will learn new skills in culinary techniques to produce a range of dishes that could include:

  • Burritos
  • Tacos
  • Enchiladas
  • Mexican Mole
  • Churros

Course participants will be able to develop their awareness of Health and Safety relating to the preparation of food, food safety awareness, practical knife skills and stove control, whilst learning logical and coherent methods for producing Mexican dishes. You will study alongside like-minded people in classes delivered by friendly expert tutors and chefs.

There is no formal assessment. You will be given feedback based on your progress with suggestions and guidance for areas for improvement.

As with all of our leisure cookery courses, the main emphasis is to come along and enjoy.

There are no formal entry requirements. The course is suitable for all levels of ability.

You will need to wear strong, flat sensible shoes and bring along an apron, tea towel, and an oven glove.

Please bring along a container to take what you have made home with you.

The total cost of this course is £130. This is a full cost course meaning that there are no fee discounts available.

The course price is inclusive of all the ingredients that you will need for each session.

You may wish to progress onto an accredited qualification in this subject, which will allow you to practice your skills in the industry.
