This fascinating cookery course will help you develop your knowledge and skills, teaching you creative and diverse ways to bring out the best and most satisfying flavours to prepare tasty dishes for special diets.

Taught by experienced and passionate chefs with significant experience, and using high quality ingredients, you will build an understanding of how to prepare and cook foods using a variety of techniques in creating, balance, texture and taste and explore your own creative culinary ideas.

This course is due to start on Thursday 15th January 2026. You will attend college on Thursday evening from 6.00pm – 9.00pm, for four weeks.

The course takes place at St Helens College, Town Centre Campus, St Helens, WA10 1PP.

You will be presented with a range of recipes suitable for a range of special diets including gluten and lactose free, high protein and healthy eating and will learn how to make dishes such as:

  • Gluten Free Bread
  • Gluten Free Curry
  • Lactose Free and Vegan Sticky Toffee Pudding
  • High Protein Flapjacks

Learners will also be able to develop their awareness of Health and Safety relating to the preparation of food, food safety awareness and stove control, whilst learning logical and coherent methods for making food for special diets.

There is no formal assessment. You will be given feedback based on your progress with suggestions and guidance for areas for improvement.

As with all our leisure courses the main emphasis is to come and enjoy!

There are no formal entry requirements. The course is suitable for all levels of ability.

You will need to wear strong, flat sensible shoes and bring along an apron and a tea towel.

Please bring along a container to take what you have made home with you.

The total cost of this course is £130. This is a full cost course meaning that there are no fee discounts available.

The course price is inclusive of all the ingredients that you will need for each session.

You may wish to progress onto an accredited qualification in this subject, which will allow you to practice your skills in the industry.
